ABOUT US

Here we are! We are Elisa and Stefano, and since 10 September 2012 we have taken over what has always been known as the Olindo Faccioli Enoteca.

Elisa worked for several years in an important wine shop in Bologna, where she had the opportunity to gain significant experience and learn many things about the world of wine. He holds a Sommelier diploma from the Italian Sommelier Association.

Then a few years ago she met Stefano, and the passion for wine has slowly become a project to now turn into a job in which we share the experiences of each one, experiences that now we would like to transmit to you every time we pour you a glass.

OUR HISTORY

Imagine being in Bologna, in the early 1920s. If you had come to the parts of Torre degli Asinelli, a small and very crowded place would certainly have captured your attention: Mr. Olindo Faccioli’s wine shop. It was a long and narrow corridor from which one entered on one side and exited on the other, on Piazza di Porta Ravegnana.

We went there to drink good wine, the choice of which often fell only between a White and a Red, but strictly of quality. And if hunger came, you had to enter the front door again and re-queue.

After ten years, in 1934, the mayor of Bologna decided to evacuate the premises; Mr. Olindo didn’t have much choice and found himself in the embarrassment of having to decide where to transfer the bar.

Via Rizzoli, despite the importance of the street already at the time, he did not like ……. so he decided for Via Altabella, a quiet street, secluded but close to the old headquarters, where there was that tower that was “Dritta, Alta and Bella”, and who for these reasons later gave the street its name.

Those were difficult times …. Mr. Olindo worked in the restaurant during the day, and slept in it at night, in the back of the shop, in order to avoid unpleasant morning surprises.

But these were also the times when the taverns represented the nerve center of the social life of Bologna. In fact, it was there that people went to chat, drink a good glass of wine or play a game of cards.

Then, many years later, his son Fiorenzo and his wife Marina arrived, who with a determined and tenacious attitude carried on the tradition of Mr. Olindo, enriching the offer with traditional Bolognese dishes.

Then Carlo, an expert sommelier, took over, who in the path traced by his parents, has maintained the tradition of the place, also preserving the Liberty style furnishings, the Thonet benches and chairs, wooden shelves full of precious bottles, and above all a counter with the same platform in Veronese marble that the grandfather had to replace the tin one, a precious material at that time, destined to produce guns and cannons that had to defend the homeland from the invader.

One hundred years later, Elisa and Stefano have recreated the atmosphere of that time, in an elegant and welcoming environment. First of all the passion for good wine and good food. A wide selection of authentic wines, respectful of nature, the territory and tradition. More than 500 labels of natural, organic and biodynamic wines, of local, national and international origin, 60 of which are Champagne, await you in the heart of Bologna. The wines are the perfect accompaniment for a great variety of culinary products, wholesome foods and non-approved tastes. Careful selection of raw materials, craftsmanship and authenticity are the elements that make up our cured meats, both national and international cheeses, as well as some traditional Bolognese dishes.

WHAT DO WE LIKE? NATURAL WINES

What do we like? Certainly good wine, since we are in a wine shop… ..and then good, genuine and natural things.

But what are natural wines? Many have given definitions … .. we mention a couple:

Natural wine communicates the beauty of biodiversity: one vintage will never be the same as another, in contrast to the homologation of taste that has raged so far. Natural wines are good, more digestible, exasperating the concept to the limit, you can drink more!

But to approach a natural wine people must have the patience to understand what one’s tastes are, how they adapt to what we have in the glass.

The beauty is not to catalog the wine; in the world of natural wines, there are Organic Wine, Biodynamic Wine. Each of these definitions has its own logic and importance, it defines how wine is made and how virtuous the producer should be.

But we don’t like definitions, wine must please those who drink it, it must be done well and with conscience. We like to say that we like good wine, the one done well, the one that is made with respect for nature and obtained without the aid of chemistry in the vineyard and corrective measures in the cellar ……… but in any case we like that created wine from a fruit that reflects the vintage and those who produce it, who put a lot of passion into doing it, and who dedicate their life to doing it better and better.
